Chicken and Waffle Sandwich

I remember the first time I made this dish for brunch with friends; it was a sunny Sunday morning that turned into a feast that had everyone raving about the unique twist on a classic. The beauty of this chicken and waffle sandwich is not just in its taste but in the joyful time spent around the table, sharing stories and savoring every crumb together

Ingredients

  • For the Chicken:
    • 2 large chicken breasts, boneless and skinless
    • 1 cup buttermilk
    • 1 cup all-purpose flour
    • 1 tablespoon paprika
    • 1 teaspoon garlic powder
    • Salt and pepper, to taste
    • Oil for frying
  • For the Waffles:
    • 1 ½ cups all-purpose flour
    • 2 tablespoons sugar
    • 1 tablespoon baking powder
    • ½ teaspoon salt
    • 1 ¼ cups milk
    • 1 large egg
    • 4 tablespoons melted butter
  • For Assembly:
    • Maple syrup
    • Sliced pickles (optional)
    • Sliced cheese (optional)

Instructions

  1. Marinate the Chicken:
Start by placing the chicken breasts in a bowl and pouring in the buttermilk. Let them marinate in the fridge for at least 1 hour to ensure they are tender and flavorful.
  2. Prepare the Flour Mixture:
In a separate bowl, combine the flour, paprika, garlic powder, salt, and pepper. This mixture will give your chicken that amazing crispy texture.
  3. Heat the Oil:
In a large skillet, heat about 1 inch of oil over medium heat. You’ll want the oil hot enough for frying but not smoking.
  4. Coat the Chicken:
Take each chicken breast from the buttermilk and dredge it in the seasoned flour mixture, ensuring it’s nicely coated in every corner.
  5. Fry the Chicken:
Carefully place the coated chicken breasts in the hot oil. Fry them for about 5-7 minutes per side or until golden brown and cooked through. Use a meat thermometer to ensure they reach 165°F (74°C). Once cooked, let them rest on a paper towel to drain excess oil.
  6. Make the Waffle Batter:
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt. In another bowl, combine the milk, egg, and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined. Don’t overmix—lumps are okay!
  7. Cook the Waffles:
Preheat your waffle iron according to the manufacturer’s instructions. Pour enough batter into the waffle iron to cover the surface, and cook until golden and crisp, usually about 4-5 minutes, depending on your iron.
  8. Assemble the Sandwich:
Take one waffle and layer on a piece of fried chicken, add slices of cheese and pickles if desired, then top with another waffle. Drizzle with maple syrup for that signature sweetness!
  9. Serve and Enjoy:
Slice the chicken and waffle sandwich in half, plate it, and drizzle more maple syrup on top. Enjoy your amazing chicken and waffle sandwich with friends and family!
