Sardine Sandwiches

Ingredients

  • 1. 1 can of sardines packed in olive oil, drained
  • 2. 2 slices of bread (sourdough, whole wheat, or baguette)
  • 3. 1/2 avocado, sliced or mashed
  • 4. 1/4 red onion, thinly sliced
  • 5. 1 tablespoon fresh lemon juice
  • 6. 1 tablespoon fresh herbs (parsley, dill, or cilantro), chopped
  • 7. Optional toppings: sliced tomatoes, cucumbers, sprouts, hot sauce, or Dijon mustard

Instructions

  1. 1. Prep the Ingredients: Drain the sardines well. Slice the avocado and red onion. Chop the fresh herbs.
  2. 2. Toast the Bread: Toast the bread to your liking.
  3. 3. Spread the Avocado: Spread a generous layer of mashed avocado on one slice of bread.
  4. 4. Layer the Sardines: Arrange the sardines on top of the avocado.
  5. 5. Add the Toppings: Sprinkle the red onion and fresh herbs over the sardines. Squeeze a bit of fresh lemon juice over everything.
  6. 6. Top it Off: Place the other slice of bread on top and gently press down.
  7. 7. Slice and Serve: Cut the sandwich in half and enjoy!
